Sri Lanka, Mango Chutney sauce.

Sauce with mango and red pepper. Mango Chutney.

Mango slices have been salted and left for several hours, but it’s much better to leave them till morning. The next day you will need the following ingredients for this sauce: vinegar, apple, cayenne pepper (I can still feel its taste), garlic (if you are not planning business meeting), and of course my favourite ginger and mustard. First you dissolve the sugar in vinegar, gradually adding other ingredients on a low flame. At the end you add cardamom and coriander and only than the mango, boiling it on a low flame till the sauce becomes thick like jam.
